The Wine-Maker devotes his passion, his energy time and
money to produce a quality wine. Therefore he is very strict regarding the quality and purity of the fruit entering his fermentation tank. Sorting after destemmer is a necessity for the Wine-Maker but it soon becomes a burden.
It requires from 6 to 10 people if a good quality has to be achieved,

A capacity that one should limit to 5 T/H
The sorting is limited to the medium size waste (dimension similar to a berry): stemmes, petioles and leaves.
Normaly used for manual harvest, as mechanical harvest capacities do not allow manual sorting.
